Gluten Free Banana Bread

This tasty and easy recipe will use up your tired bananas, and create you a wholesome treat at the end.

Ingredients

4 small ripe bananas mashed 

180g gluten free self-raising flour 

1 tsp gluten free baking powder 

1 tsp cinnamon 

120g brown caster sugar 

100g butter melted 

2 large eggs

1 tbsp icing sugar 

½ cup chopped roasted hazelnuts 

3 tbsp maple syrup

Method

  1. 1) Build your fire, approximately 4 logs and stoke the fire to increase the temperature to 180C, use a temperature gauge inside the oven to monitor the temperature.
  2. 2) Line a 900g loaf tin with parchment paper. Put in all the ingredients, except 1tbsp caster sugar and the icing sugar, into a large bowl and stir until smooth and combined.
  3. 3) Pour into the tin and sprinkle over the caster sugar. Bake for a hour to an hour 15 minutes, until the skewer comes out clean, covering with foil towards the end of the cooking if it browns too much.
  4. 4) Dust with icing sugar and leave to cool.
