Date Crumble Slices

Ideal for a lunch box, picnic or tea time treat, these bars will turn your penguins into pen-grins!

350g dates

90ml water

Grated rind of a large lemon

225g plain flour

100g oats

75g soft brown sugar

150g butter, melted

  1. 1) Heat the water, lemon rind and dates in a saucepan on the top of the stove. Cook until the dates are soft and beginning to fall apart. You should have a nice gooey mixture.
  2. 2) In a bowl, combine the flour, oats and sugar and then mix in the melted butter.
  3. 3) Line a shallow cake tin with foil. Dampen a sheet of kitchen roll and lay that on the foil in the bottom of the dish, then cover it with more foil. This gives some protection against burnt bottoms!
  4. 4) Put half the flour and oat crumble mixture into the tin, top with the dates and finish with the rest of the crumble.
  5. 5) Press the mixture down firmly, then place the tin in the oven at about 200 degrees C. They will cook in about 20 minutes, but keep an eye on them in case they catch and start to burn.
  6. 6) Allow to cool for a few minutes before turning out and slicing.
