Apple, Plum and Ginger You Won’t Grumble At This Crumble

Ingredients

Filling

3 or 4 eating apples
4 plums (if not available add extra apple to replace)
3 tbsp water/apple juice
1 tbsp sugar
1 tbsp fresh chopped ginger (optional but amazing)

Crumble

2 oz /50g plain flour
2oz/50g oats
2oz margarine
1 tbsp light soft brown sugar

Method

  1. 1) Oven Temp: 180 degrees Celsius. We used a round ceramic dish in a Hungry Penguin. This will also work in a loaf tin, in any of our 5kW oven penguins. If you are doing a bigger crumble in the 88, just double quantities to match. If you make more crumble topping than you need, it keeps fine overnight in the fridge.
  2. 2) Light the fire 45mins/1 hour before you want to use the oven, you want it to reach the desired temp and stay there. Usually easier when the initial log has burnt down to orange embers and the second load of fuel goes in.
  3. 3) Peel, remove the core, then chunk or slice the apples, roughly 1 cm thick. Half and de-stone the plums. Put into your cooking dish, until about ¾ full of fruit.
  4. 4) Peel and finely chop ginger. Add ginger, sugar and water to fruit.
  5. 5) Put flour and oats into a bowl, add margarine, rub in with fingertips, until it looks like breadcrumbs.
  6. 6) Add sugar to the flour and margarine mixture, mix in.
  7. 7) Spoon over the fruit mixture, use fork to spread evenly
  8. 8) Put in the oven for about 45 minutes or until you can push a sharp knife into a piece of apple and it is soft.
  9. 9) Eat with your favourite cream, ice cream or custard.
